Banana Muffins with Chocolate Chips, Nuts, Raisins, Coconut, Shredded Carrot, etc.

 


This recipe is simple and nutritious... its a great way to use up those bananas that are going dark rather than throwing them out... add in variations you like such as coconut, shredded carrot, etc.

I use brown sugar and real butter for baking.

I also can confirm these disappear fairly quickly.

Preheat oven to 350, makes a dozen muffins, bake for 25-30 minutes [could also make a cake instead]

Ingrediants and how to make these muffins:

Cream together 1/2 cup of butter with 1 1/2 cup of brown sugar, then add in two large eggs.

Mix together 2 cups of flour, 1/4 teaspoon baking powder, 3/4 teaspoon soda, 1 teaspoon salt.

Combine wet and dry ingrediants.

Add in 1/4 cup buttermilk [could use milk with 1 teaspoon of vinegar]

Add in 1 cup smushed/smashed bananas [2]

Put your 1/2 of nuts, raisins, chocolate chips

Spoon batter into buttered baking muffin tin.

Bake for 25-30 minutes... Ask your friend to come over and help you enjoy them with a coffee/tea, etc.

Added some oatmeal to these as I was a little short of flour - used some shredded carrots too... yum!

Almond on top! Enjoy warm with melted butter.
