Banana Muffins with Chocolate Chips, Nuts, Raisins, Coconut, Shredded Carrot, etc.
This recipe is simple and nutritious... its a great way to use up those bananas that are going dark rather than throwing them out... add in variations you like such as coconut, shredded carrot, etc.
I use brown sugar and real butter for baking.
I also can confirm these disappear fairly quickly.
Preheat oven to 350, makes a dozen muffins, bake for 25-30 minutes [could also make a cake instead]
Ingrediants and how to make these muffins:
Cream together 1/2 cup of butter with 1 1/2 cup of brown sugar, then add in two large eggs.
Mix together 2 cups of flour, 1/4 teaspoon baking powder, 3/4 teaspoon soda, 1 teaspoon salt.
Combine wet and dry ingrediants.
Add in 1/4 cup buttermilk [could use milk with 1 teaspoon of vinegar]
Add in 1 cup smushed/smashed bananas [2]
Put your 1/2 of nuts, raisins, chocolate chips
Spoon batter into buttered baking muffin tin.
Bake for 25-30 minutes... Ask your friend to come over and help you enjoy them with a coffee/tea, etc.
Share your recipe with others.. be kind; be generous... a lot of very giving people often aren't really rich - funny how that works... huh?
Added some oatmeal to these as I was a little short of flour - used some shredded carrots too... yum!
Almond on top! Enjoy warm with melted butter.

"Less than a week after saying it would make no commitments, New Brunswick's Mount Allison University has announced it would make the COVID-19 vaccine mandatory for students and staff.
In a release Thursday, the Sackville, N.B., school said the announcement was "in response to evolving developments in the COVID-19 pandemic."
“As we have consistently for the past 17 months, we will continue to adapt to what is happening with the COVID-19 pandemic in an effort to keep our campus and community as safe as possible,” said president and vice-chancellor Jean-Paul Boudreau.
“We thank everyone who has already been fully vaccinated and encourage the rest of our community to get vaccinated as soon as possible.”

University welcomes Tony from China, 12 years old, an international student registered with the campus... why this should be of interest to locals: China is an oppressive technocracy, not a democracy.. so why would they be sending their young children here to Canada to study at university level?
Every year in Canada many thousands of people die from the flu.
This ” covid ” death toll nationally of around 9250 is not reaching the criteria to be given a pandemic designation.. so why is it? What are the recovery rates? Why is testing being promoted so heavily? Inititally it was called ‘ corona virus disease ‘ which was shortened to COVID-19 or as Trump called it “China’s Virus” .. whatever this is .. its destroying our society, our joy, our entrepreneurs, our capitalist/free enterpriser economies and humanity’s connectedness.. I pity anyone who thinks that these health officials are going to ease off even if the numbers of deaths do not equate to a pandemic.. they appear to have a very different agenda to me… its an agenda focussed on fear mongering, vaccine and testing promotion, track and trace spying, and NOT promoting good health measures like immunity boosting for old people… putting masks on children for school is a dark and disturbing practice since children are the most healthy and resistant to say otherwise is to lie….
